A good Caesar salad is all about contrast: cold, crunchy lettuce, warm chicken, crisp croutons and a dressing that is rich, garlicky and sharp with lemon and Parmesan. This version uses an easy dressing made with mayonnaise instead of raw egg yolk, so it is safe to keep in the fridge and comes together in a minute.

Why this recipe works

  • Homemade croutons. Torn bread tossed with garlic oil and baked until golden is far better than store-bought, and uses up day-old bread.
  • A dressing with backbone. Anchovy, Dijon mustard and Worcestershire sauce add savory depth. The anchovy melts away; you will not taste fish, only a rounder flavor.
  • Dry lettuce. Wet leaves dilute the dressing. Spin the romaine well, and chill it if you can.

Is Caesar dressing made with anchovies?

Classic Caesar dressing contains anchovy, either as fillets or through Worcestershire sauce. If you prefer to leave it out, add an extra ½ teaspoon of Worcestershire sauce and a little more Parmesan for depth. Note that most Worcestershire sauce contains anchovies too, so use a vegetarian brand if needed.

Make it a meal

Grill or pan-sear the chicken, or use leftover roast or rotisserie chicken. The salad is also excellent with the lemon-garlic chicken from our chicken souvlaki, or with grilled shrimp.

FAQ

Can I make Caesar salad ahead?

Make the dressing, croutons and chicken up to 2 days ahead and keep them separately. Toss everything together just before serving so the lettuce and croutons stay crisp.

What lettuce is best?

Romaine (cos) is traditional because its sturdy, crunchy leaves hold up to a thick dressing. Little Gem lettuce is a good alternative.

Instructions

Make the dressing

  1. Whisk together the mayonnaise, Parmesan, lemon juice, anchovy, garlic, mustard, Worcestershire sauce and pepper. Add water a little at a time until pourable. Refrigerate.

Make the croutons

  1. Heat the oven to 375°F (190°C, or 170°C (340°F) fan, gas mark 5). Toss the bread with the olive oil, garlic and salt and spread on a sheet pan.

  2. Bake for 10 to 12 minutes, stirring once, until golden and crisp. Let cool.

Cook the chicken and assemble

  1. Pound the chicken to an even thickness, brush with olive oil and season with the salt and pepper.

  2. Cook in a hot skillet or grill pan over medium-high heat for 5 to 6 minutes per side, until cooked through (165°F / 74°C (165°F)). Rest for 5 minutes, then slice.

  3. In a large bowl, toss the romaine with about two-thirds of the dressing. Add the croutons and shaved Parmesan and toss gently.

  4. Top with the sliced chicken, drizzle with the remaining dressing and serve.

Notes

  • Taste the dressing before adding salt: anchovies, Parmesan and Worcestershire sauce are all salty.

Tips

  • Use a vegetable peeler to shave Parmesan into wide, thin curls.
  • Dress the salad in a large bowl so you can toss it without bruising the leaves.

Substitutions

  • Greek yogurt: replace half the mayonnaise with plain Greek yogurt for a lighter, tangier dressing.
  • Gluten-free: use gluten-free bread for the croutons, or replace them with toasted chickpeas.
  • Kale: mix in finely shredded lacinato kale with the romaine.

Storage and reheating

  • Keep the dressing in a jar in the fridge for up to 1 week.
  • Store croutons in an airtight container at room temperature for up to 3 days.
  • Dressed salad does not keep; store leftover components separately.
