Souvlaki is Greek street food at its best: small pieces of meat marinated in olive oil, lemon, garlic and oregano, threaded onto skewers and cooked over high heat. Chicken thighs are the best choice for home cooks because they stay juicy even when they char at the edges. Serve the skewers with tzatziki, warm pita and a simple tomato and cucumber salad for an easy dinner that feels like a summer holiday.

Why this recipe works

  • A short, bright marinade. Lemon juice flavors the chicken quickly, but more than about 8 hours makes the texture mushy. One to four hours is the sweet spot.
  • Even pieces. Cutting the chicken into 1¼-inch (3 cm) cubes means every piece cooks at the same rate.
  • High heat. A hot grill or broiler gives charred edges before the inside dries out.

Grill, grill pan or broiler

An outdoor grill gives the most authentic smoky flavor, but a ridged grill pan or your oven broiler (grill) works well indoors. Under the broiler, set the skewers on a foil-lined sheet pan about 4 inches (10 cm) from the heat and turn them every few minutes.

How to serve souvlaki

Pile the chicken into warm pita with tzatziki, sliced tomato and red onion, or serve it on a plate with rice, lemon potatoes or a Greek salad. For another make-ahead dinner from the grill or skillet, try pan-seared pork chops.

FAQ

Do I need to soak wooden skewers?

Yes. Soak wooden or bamboo skewers in water for 30 minutes so they do not burn. Metal skewers need no soaking.

Can I use chicken breast?

Yes, but marinate it for no more than 4 hours and pull it off the heat as soon as it reaches 165°F (74°C), as breast meat dries out faster.

Instructions

Marinate the chicken

  1. In a large bowl, whisk together the olive oil, lemon juice and zest, garlic, oregano, paprika, salt and pepper. Add the chicken and toss to coat.

  2. Cover and refrigerate for at least 1 hour and up to 8 hours. If using wooden skewers, soak them in water for 30 minutes.

Make the tzatziki

  1. Coarsely grate the cucumber, then squeeze it firmly in a clean towel to remove as much liquid as possible.

  2. Stir the cucumber into the yogurt with the garlic, olive oil, lemon juice, dill and salt. Refrigerate until needed.

Cook the souvlaki

  1. Heat a grill or grill pan to medium-high, or heat the broiler with a rack about 4 inches (10 cm) from the heat.

  2. Thread the chicken onto 8 skewers, leaving a little space between pieces so they cook evenly.

  3. Cook for 10 to 12 minutes, turning every 2 to 3 minutes, until lightly charred and cooked through (165°F / 74°C (165°F)).

  4. Rest the skewers for 5 minutes, then serve with warm pita, tzatziki, tomatoes and onion.

Notes

  • Squeezing the cucumber well keeps the tzatziki thick. Skip this step and it turns watery within an hour.
  • The skewers can be assembled up to 8 hours ahead and kept covered in the fridge.

Tips

  • Oil the grill grates just before cooking so the chicken releases easily.
  • Finish with a squeeze of lemon and a pinch of dried oregano for an authentic Greek flavor.

Substitutions

  • Pork: pork shoulder or tenderloin is the most traditional souvlaki meat; marinate and cook it the same way.
  • Dairy-free: serve with hummus or a garlic and lemon dressing instead of tzatziki.
  • Fresh oregano: use 2 tablespoons chopped leaves in place of dried.

Storage and reheating

  • Refrigerate cooked chicken for up to 4 days and tzatziki for up to 3 days.
  • Raw marinated chicken can be frozen for up to 3 months; thaw overnight in the fridge before threading and cooking.
